Chocolate Peanut Butter Pretzel Slice

A rich, moreish, sweet, salty snack or dessert made up of layers of medjool dates, peanut butter, melted chocolate and crunchy salted pretzels. And the best about it is – no baking required!

This recipe is so easy to put together. It starts with a layer of medjool dates pressed onto a baking pan as a the base the layer, then peanut butter is spread over the top as the middle layer, and then it’s finished off with melted dark chocolate, pretzels and a pinch of finishing salt if you like a bit of extra salt like I do!

I like to cut these up into bite-sized pieces and keep them in a container in the freezer. Jamie eats them straight out of the freezer, whereas I like to leave mine to defrost for 5-10mins before eating for that perfect chewy texture!

Ingredients You Will Need:

  • Medjool dates
  • Natural peanut butter
  • Dark chocolate
  • Salted pretzels
  • Pinch of salt (optional)

Recipe Notes:

  • Can I use regular dates? You could, however regular dates are smaller, drier and harder to “smush” into the base layer that you need for this recipe. Medjool dates are more expensive, but they are bigger, softer, juicier and have this sweet, almost caramel-like taste.
  • Can I sub out the peanut butter? If you have a peanut allergy or if you just don’t like peanut butter, you could potentially sub this out at a 1:1 ratio with almond butter or a seed butter like tahini, however I haven’t tried this so I don’t know how it will taste or what the consistency will be like!

Ingredients
  

  • 200 g medjool dates you can use regular dates, but I find medjool are softer, sweeter and taste so much better than regular dates
  • 1/2 cup natural peanut butter
  • 70 g block of dark chocolate bar I used Lindt 78% dark
  • 1/2 cup salted pretzels
  • pinch of sea salt

Instructions
 

  • Open the dates and remove the seeds
  • Press them down (open side down) onto a lined baking tray and shape it into a square – try to avoid leaving any gaps if possible as this will be the base of the slice
  • Spread the peanut butter evenly over the date layer
  • Break the dark chocolate into small pieces and melt – you can do this by putting it in a jug or bowl over hot water and stirring, or by putting it in the microwave and heating it for 30 seconds at a time and stirring until completely melted through
  • Pour the chocolate over the peanut butter and spread gently
  • Arrange the pretzels on the chocolate layer
  • Sprinkle the sea salt over the top
  • Place whole tray in the freezer for an hour
  • Cut it into preferred sized pieces and place in an airtight container – keep it in the freezer for an extra crunchy snack, or in the fridge for a more chewy snack (this is my fave way to have it!)
