4-Ingredient Banana Oat Cookies Recipe

A simple recipe for banana oat choc chip cookies using only four simple ingredients that you likely have in your pantry right now! This is also a fabulous way to use up any ripe bananas you have sitting on your kitchen counter, without the mess of making banana bread!

Ingredients You Will Need:

  • One ripe banana
  • Chocolate chips
  • Peanut butter (the natural kind with nothing added, as the texture and taste is better for this)
  • Rolled oats
  • Optional – flaky sea salt (I think this ties everything in together nicely on top, however you can still make it without and it will still be great!)

This is a recipe I came up with when I bought too many bananas even after Jamie specifically warned me that it was “too many bananas” and that I would never eat them all before they went off. He was right of course, but I wasn’t about to let him know that!

Usually when I have overripe bananas, banana bread or freezing them for smoothies would be my go-to uses for them, but I didn’t want to go to the effort of measuring out everything for bread, and unfortunately our blender died so smoothies are not in our plans for the foreseeable future.

This cookie recipe is simple, uses minimal ingredients and involves just mashing everything together and rolling them into little balls and baking them. It’s done in less than 15 minutes from start to finish and it’s also very easily adaptable for taste/allergens too, which I go through below in the recipe notes.

Recipe Notes:

  • Chocolate chips: I’ve used dark here, as that’s what we had. But you could use caramel, milk or even white chocolate chips. I’ve also made this same recipe and replaced the choc chips with the same amount of raisins too and they worked out just as well! (If you do use raisins, I would recommend also adding a teaspoon of cinnamon too, and it gives this delicious raisin toast kind of flavour).
  • Peanut butter replacement: If you don’t like peanut butter, or have a peanut allergy, you can sub with any other natural nut butter – like almond or macadamia. You can even use a seed butter like sunflower or tahini.
  • Sweetener Options: I use really ripe bananas for this, which lends it’s own natural sweetness so no sugar or sweetener is needed. However if you are using a banana that is not quite there yet, please feel free to add a tablespoon of honey, maple syrup or other sweetener of choice if you would like it sweeter.

Course Snack
Servings 8 cookies

Ingredients
  

  • 1 banana extra ripe
  • 1 cup rolled oats
  • 1/4 cup chocolate chips dark
  • 1/4 cup peanut butter natural
  • Optional: flakey sea salt like Maldons

Instructions
 

  • Pre-heat oven to 180 degrees celsius
  • Mash the banana in a bowl
  • Add rolled oats, chocolate chips and peanut butter to the bowl and mix well
  • Roll a tablespoon of the mixture in your hand and press down gently onto a lined baking sheet. Repeat with the remaining mixture. This makes around 8 small cookies (you can make these larger if you wish).
  • Add a little pinch of salt over the cookies if you are using it
  • Bake at 8-10 minutes depending on the size of your cookies
  • Leave to cool on the tray before eating
