I go through phases with granola. Sometimes I can go as long as a year without eating it. And then, when I finally do get around to making some, I will happily eat it every single day for weeks until it’s gone. There is absolutely no in between.
Whenever I do get the urge to make granola, this recipe is my go-to. It’s based off of Molly’s Granola No. 5 (thank you Heidi for introducing me to this recipe years ago). I’ve changed the measurements over time to suit my own taste, and I’ve also added in cinnamon and nutmeg. But mostly, it’s stayed pretty true to the original recipe.
It’s a really simple one as well, with minimal ingredients. Oats, nuts, coconut chips, olive oil, maple syrup, cinnamon and a pinch of salt to balance everything. It all gets tossed about in one bowl and then spread out on a tray to bake, with some stirring occasionally to ensure even cooking. The hardest part of the cooking process is leaving it to cool completely on the tray before storing it away (or eating it if you’re as impatient as I am).
A generous helping of this, with some yoghurt or milk, your favourite fruit (bananas or berries for me please) and possibly even a big spoonful of peanut butter too when you’re feeling extra indulgent… is a heavenly combination. Perfect for a speedy breakfast, or as an afternoon pick-me-up.
Variations
Optional add ons: If you want to add a little something special to the mix, dark chocolate chips, raisins or chopped dates/dried figs would go really well in this! Just toss them in after the granola is baked and cooled.

Maple Cinnamon Granola
Ingredients
- 3 cups rolled oats
- 2 cups mixed raw nuts
- 1 cup coconut chips
- 1/2 cup maple syrup
- 1/3 cup olive oil
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
Instructions
- Preheat oven to 150 degrees celsius
- Add all ingredients to a large mixing and stir to combine
- Line a tray with baking paper
- Spread mix out evenly in a thin layer over the tray
- Place on middle tray in the oven and bake for 40 minutes
- Remove the tray from the oven and stir the mix twice during the baking to ensure even cooking (approx every 15 minutes)
- Leave to cool completely on the tray, the granola will get crunchier as it cools
- Store in airtight container for up to two weeks
